Spago Foods has operated a single brand since 2019, by choice. Magnolia Bakery is now the largest of its franchises anywhere by store count — and the proof of how we build.

Established 1996
Magnolia Bakery opened on Bleecker Street in New York's West Village in 1996 and became one of the most recognised bakery names in the world — known for its banana pudding, its cupcakes, and a certain minute of television that turned a neighbourhood bakery into a destination.
Spago Foods brought it to India in 2019 as the brand's master franchisee. Thirteen stores on, across four cities, every one is owned and operated by us.

Ten months before a single cupcake was sold.

A long selection process
The application ran for months, with repeated discussions about vision and intent before either side committed. Roughly ten months passed between those first conversations and the first store trading.

Solving ingredients
Magnolia Bakery sets a standard for every ingredient it uses. Working with the brand’s corporate chef from the US, we identified a mix of local and imported supply that met those standards — localising as far as it would go, importing whatever could not be matched here.

Four months of training
Back-of-house chefs trained with the corporate chef on the brand’s standard operating procedures for four months, working until the products tasted the way they were supposed to.

Building recall before the doors opened
The brand had little recall in Bengaluru in 2019. A PR campaign ran ahead of the opening, including a first look with Vogue. The store opened to queues outside the door for a week.

Four cities, thirteen stores
Bengaluru in 2019, Hyderabad in 2022, Mumbai in 2023 and Delhi NCR in 2025 — with a central kitchen in every city and two further stores in development.

Our own design and engineering teams take each store from drawings to opening, with fit-out timelines long enough to do it properly.

We keep the menu and format as close to the original as we can, and are careful not to modify it so far that it stops being what the brand is known for.
Two ranges are ours: an eggless line created in 2024 for local dietary preferences, and a seasonal range that heroes mangoes through the summer months. Both were developed to the brand's standards rather than around them.
We took one brand to scale. We are ready for a second.
