Spago Foods was founded in 2019 by Zonu Reddy and Nischay Jayshankar, on a conviction formed over years of eating their way around the world: exceptional food begins with uncompromising ingredients, and authenticity is worth protecting.

Seven years, one brand, four cities.

Seven years on, that conviction is a company of 450 people running 13 outlets across four Indian cities — with in-house production in every one of them, and Magnolia Bakery's largest franchise partnership anywhere by store count.

We did not get there by buying a licence and opening doors. Before the first store traded, our chefs spent four months training with the brand's corporate chef, a PR campaign including a first look with Vogue built recall the brand did not yet have in Bengaluru, and the store opened to queues outside the door for a week.

How we grew

    2019 — Spago Foods is founded

    Zonu Reddy and Nischay Jayshankar establish the company in Bengaluru to bring international food and beverage brands to India.

  • 02

    2019 — Magnolia Bakery opens in India

    After a lengthy partner selection process and roughly ten months of groundwork, the first Magnolia Bakery in India opens in Bengaluru in November — the brand's debut in the country.

    2022 — Hyderabad

    The brand's first expansion beyond Bengaluru opens at Jubilee Hills in October — 3,000 sq ft with 23 dine-in tables and a mural pairing Hyderabad's landmarks with New York's.

    2023 — Mumbai flagship

    A 2,300 sq ft flagship opens on Bandra's high street in October, across a ground floor and mezzanine.

    2024 — An eggless range, developed in India

    A dedicated eggless line is created for the Indian market — a genuine adaptation of the brand's repertoire rather than a substitution, developed to the same standards as the original.

    2025 — North India

    The first Delhi NCR outlet opens on Golf Course Road, Gurugram in November, taking the brand into North India for the first time.

    Today — Thirteen outlets, four cities, 450 people

    With central kitchens in every city of operation and two further outlets in development, in Bengaluru and Hyderabad.

What makes Spago different.

We protect the brand, not just the licence

We localise ingredients to the brand’s specification wherever it can be done, and import whatever cannot be matched here rather than compromise. Seven years of that has produced a vendor base across India built to an international standard.

We build the kitchen before the storefront

A central kitchen in every city, four warehouses of 5,000 sq ft each, and cold chain from warehouse to store with daily distribution. It is why the product tastes the same in Bengaluru as it does in New York.

We get prime sites, and build them properly

Both founders come from real estate. We work directly with DLF, Phoenix, Prestige and Brookfield, with advisory from JLL and CBRE. Our own teams take a store from drawings to opening, with a minimum sixty-day fit-out against a thirty-day market standard.

We adapt for India without diluting

The eggless range developed in 2024 is the clearest example: a considered response to how India eats, created to the brand’s standards rather than as a shortcut around them.

Co-Founder

Leads the business day to day, with operations, marketing and HR reporting to her. She holds a degree in molecular and cellular biology from UC Berkeley and, alongside Spago Foods, manages her family's commercial real estate portfolio of 18 million sq ft of Grade A office space in Bengaluru.

Nischay Jayshankar

Co-Founder

Leads store design, build-outs and logistics — everything that turns a signed site into a trading store. He is a director of Adarsh Developers, one of Bengaluru's leading real estate groups, whose hospitality division operates three properties in the city.
